Nonna's Tomato Sauce

Nonna's Tomato Sauce is good with all shapes of pasta including vegetable pasta and as a sauce for making homemade pizza.

Nonna's Tomato Sauce

Ingredients

3 tablespoons extra-virgin olive oil
1 medium yellow onion
2 cloves peeled fresh garlic
1 lb. fresh tomatoes or 1 (28-ounce) can crushed organic tomatoes
6 fresh basil leaves torn into pieces
1 pinch of fresh or dried oregano
Salt and pepper to taste
(Optional 1 raw zucchini, grated)

Directions

  1. Rinse the tomatoes and wipe them dry. Peel and chop them into cubes.
  2. Chop the onions medium and mince the garlic.
  3. Warm the olive oil in a large saucepan over medium heat.
  4. Add the onion and cook, stirring often, until softened, about 3 minutes.
  5. Stir in the garlic; cook until fragrant, about 20 seconds.
  6. Stir in the tomatoes, salt, pepper, basil and oregano. (Add the zucchini.)
  7. Bring to a boil, then reduce heat and simmer partially covered for 20 minutes, stirring often to prevent sticking.
  8. Cover and set aside off the heat to keep warm.
