Nonna's Tomato Sauce

Nonna's Tomato Sauce is good with all shapes of pasta including vegetable pasta and as a sauce for making homemade pizza.

Ingredients
3 tablespoons extra-virgin olive oil
1 medium yellow onion
2 cloves peeled fresh garlic
1 lb. fresh tomatoes or 1 (28-ounce) can crushed organic tomatoes
6 fresh basil leaves torn into pieces
1 pinch of fresh or dried oregano
Salt and pepper to taste
(Optional 1 raw zucchini, grated)
Directions
- Rinse the tomatoes and wipe them dry. Peel and chop them into cubes.
- Chop the onions medium and mince the garlic.
- Warm the olive oil in a large saucepan over medium heat.
- Add the onion and cook, stirring often, until softened, about 3 minutes.
- Stir in the garlic; cook until fragrant, about 20 seconds.
- Stir in the tomatoes, salt, pepper, basil and oregano. (Add the zucchini.)
- Bring to a boil, then reduce heat and simmer partially covered for 20 minutes, stirring often to prevent sticking.
- Cover and set aside off the heat to keep warm.
